Pumpkin Bar Cookies
(From Montana November 1994)

2 cups sugar
1 can pumpkin (16oz can)
1 cup vegetable oil
4 eggs
2 teaspoons cinnamon
2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
2 cups flour
1 cup walnuts, chopped     

MIX together well sugar, pumpkin, oil, eggs and cinnamon. ADD dry ingredients and mix well again. ADD and stir in walnuts, mixing well. Grease large baking sheet, cover with parchment paper and grease again then spread pumpkin mixture to cover area.

Bake at 350 degrees for 25 minutes. Remove for oven and let cool completely, then cover with the cream cheese icing. 

This is very good! Great to make for an office party or family gathering.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup. (Let stand 5 minutes before using)

CREAM CHEESE FROSTING 

1/2 stick of butter or margarine, softened
4 oz. cream cheese
2 cups powdered sugar
1/2 teaspoon vanilla  

Beat softened butter/margarine, cream cheese, powdered sugar and vanilla until light and fluffy. Spread over top of pumpkin bars. Cut into squares and serve.
