Libby's Oatmeal Cookies
Libby Woods (1985)

1/2 cup shortening
1/2 cup margarine
2 eggs
1 cup white sugar
1 cup lite brown sugar, packed
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
3 cups oatmeal

Cream shortening, margarine and eggs.
ADD white and brown sugar and vanilla. Mix well.          ADD flour, salt, baking soda and oats. Mix until all combined.
Drop by teaspoonfuls on greased cookie sheet.            

Bake 350 degrees for 10 minutes                                 Makes 5 - 6 dozen cookies                                               

Very good with milk.

How to make buttermilk
when you don't use buttermilk in your baking or cooking.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup. (Let stand 5 minutes before using)
