Old Favorite Oatmeal Cookies

1 cup raisins
1 cup water
1 1/2 cups sugar
3/4 cup shortening
1 teaspoon vanilla
2 eggs
2 cups quick-cooking or regular oats
1 teaspoon baking soda
1 teaspoon salt
1teaspoon cinnamon
2 1/2 cups whole wheat blend flour
1/2 teaspoon baking powder
1/2 teaspoon ground cloves                                  
1/2 cup pecans, chopped

Pre-Heat oven to 350 degrees.
Heat raisins and water to boiling; reduce heat to medium. Simmer uncovered until raisins are plump, about 15 minutes. Drain raisins, reserving liquid.  ADD enough water to reserved liquid to measure 1/2 cup.                     
MIX sugar, shortening, vanilla and eggs in a large bowl. Pour raisin liquid in and mix well; STIR in remaining ingredients and mix well. ADD raisins and stir gently. DROP by rounded teaspoonfuls about 2 inches apart onto a cookie sheet lined with parchment paper. BAKE until light brown, 8 to 10 minutes. Immediately remove from cookie sheet and cool.                     
Makes about 6 1/2 dozen cookies.

How to make buttermilk
when you don't use buttermilk in your baking or cooking.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup. (Let stand 5 minutes before using)
