Snicker Doodles Cookies

1/2 cup butter, softened
1/2 cup Crisco butter shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 3/4 cup all-purpose flour                                                    1/2 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven 350.

Mix sugar and shortening in a large bowl, until well blended. ADD eggs, mix well, add vanilla. In another bowl, mix all dry ingredients. ADD dry ingredients into shortening mixture, mix well. Refrigerate dough for about 1 hour, easier to work with.

Mix 2 Tablespoons sugar and 1 teaspoon cinnamon in a small bowl. Roll dough into small balls, one at a time, then roll in cinnamon sugar mixture until well coated. Place on ungreased cookie sheet.

Bake 10-12 minutes. They will look uncooked and will not turn brown. They will complete cooking as they cool.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup. (Let stand 5 minutes before using)
