Stir & Drop Sugar Cookies
(From Eula Banta 1972)

Beat with a fork until blended:
2 eggs

Stir in until well blended:
2/3 cup cooking oil
2 teaspoons vanilla
1 teaspoon lemon rind, grated

Blend in until blended:
3/4 cup sugar

Sift together and stir in:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Blend all together well.

Drop by teaspoon onto an ungreased cooking sheet about 2 inches apart. Flatten each cookie with a greased glass dipped in sugar.

Bake until light brown, 8-10 minutes at 400 degrees
(Makes about 3 dozen)

How to make buttermilk
when you don't use buttermilk in your baking or cooking.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup. (Let stand 5 minutes before using)
