Flaky Pie Crust

2 cups flour, sifted
1/2 teaspoon salt
3/4 cup Crisco, rounded at top

Mix flour and salt, add Crisco and cut into flour. Mix with fork until it looks like peas. ADD 5-6 Tablespoons of water and toss until it forms a big ball. Pinch in to half and roll out on a floured dough board. Makes 2 pie crust (9" round)

                   Cobbler Pie Crust

3/4 cup buttermilk
1/8 teaspoon baking soda
1 teaspoon salt
1/2 cup Crisco, rounded up
2 cups flour, sifted (may need more)

Mix all ingredients together, add extra flour by tablespoons until you can handle dough and roll it out. Then cut in strips to place on top of cobbler. Most cobblers have a bottom crust as well as a top crust. Brush crust with 1/4 cup of milk and sprinkle sugar on top. Bake at 350 degrees or until crust is golden brown.

Meringue Topping

2 eggs whites
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 Tablespoons sugar

Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually ADD sugar while beating and beat until egg whites are stiff and glossy. Spoon on top of prepared pie filling, sealing edges to pie crust. Bake at 350 degrees 8-10 minutes or until peaks are lightly brown. Don't over bake.
