Easy Cherry Pie
1 cup milk
2 Tablespoons margarine or butter, softened
1/4 teaspoon almond extract
1/2 cup Bisquick baking mix
1/4 cup sugar
1 can cherry pie filling (or use apple, apricot, blueberry, peach, or strawberry)
Heat oven to 400 degrees. Grease pie plate 10 x 1 1/2 inches. Beat all ingredients together except the pie filling and Streusel until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate then spoon pie filling evenly over the top.
Bake for 25 minutes. Remove from oven and add the Streusel, below. Bake until Streusel is brown, about 10 minutes longer. Let cool. Refrigerate any left-overs.
Cut 2 Tablespoons's firm margarine or butter into 1/2 cup Bisquick baking mix, 1/2 cup packed brown sugar and 1/2 teaspoon ground cinnamon until crumbly. Sprinkle over pie and bake until brown, about 10 minutes longer.
