Pineapple Coconut Pie
(Grandma Judkins 1970)
Very good pie!
1 1/4 cups sugar
1 can crushed pineapple, undrained
3 eggs slightly beaten
3 Tablespoons all-purpose flour
1 can coconut
3/4 stick butter or margarine, melted
1/4 teaspoon vanilla
1 pie crust unbaked, 9-inch
Stir together the sugar, pineapple, beaten eggs, flour, coconut and vanilla. ADD melted butter and mix well. Pour filling into unbaked pie crust.
Bake at 340 about 45 minutes or until filling in the middle is set and brown. Wrap crust edges to keep from browning too much with foil or pie crust wraps.
