Chicken & Dumplings


Chicken: Use fresh chicken, whole or de-boned chicken breast cut into cubes that has been washed. Salt & Pepper.

Using a medium size pan filled with enough water to cook chicken, ADD chicken and bring water to boiling stage. Cook chicken until pink is gone.

Prepare dumplings while chicken is cooking.

Remove cooked chicken from water and place on a plate and set aside. Keep water bubbling for dumplings.

Dumplings

1 cup sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

1/2 cup milk
2 Tablespoons salad oil

Sift flour, baking powder, and salt together into a mixing bowl.  Combine milk and salad oil;  ADD at once to dry ingredients, stirring just till moistened.

Drop by Tablespoon atop bubbling water that chicken was cooked in. Cover tightly; let dumplings return to boiling. Reduce heat (don't lift lid or cover);  simmer 12 to 15 minutes.                    Makes about 10 dumplings.

After dumplings are done, add chicken and stir gently.

NOTE: A can of Veg-All can be added, if you like. (drain half the juice off before adding to dumplings)

Serve with salad, cornbread or hot rolls.

NOTE

QUICK WAY to fix to fix chicken & dumplings.

Use 2 cans of cooked chicken. Pour chicken and juice into a pan; fill with enough water to cook dumplings.

Dumplings:
Use recipe on the box of a baking mix.

Prepare everything the same way as original recipe on page.
