Breakfast Pizza

1 pkg dinner crescent rolls
1/2 lb. to 1 lb. sausage, cooked (Or try cooked bacon or ham )  1/4 cup onion (optional)                                                                   1/4 cup green bell pepper (optional)                                              4 - 6 eggs, scrambled with fork, salt & pepper to taste               Grated cheese to sprinkle on top (optional)
Cook sausage in skillet, crumbling into small pieces. While meat is cooking prepare pizza pan with crescent rolls. Place dough into a pizza pan and work dough with hands until it has covered all of the pizza pan. Push dough up the sides of pan. Cover any holes with dough by pressing with fingers to cover them up.

ADD onion and bell pepper to meat mixture. (optional) Be sure sausage is cooked well before adding the onion and bell pepper. Remove meat mixture from stove and drain any grease with paper towels. (Blot sausage well with paper towels)  Sprinkle sausage mixture over crescent dough. Pour scrambled eggs over sausage mixture evenly. Top with grated cheese.

Bake in oven 350F degrees until eggs are set and crust is golden brown; about 15 to 20 minutes.
Cut in slices just like a pizza and serve with your favorite Salsa!

This was a big hit with my boys. Enjoy!

TIP:

How to make buttermilk when you don't have any or don't use buttermilk daily.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup (let stand for 5 minutes before using)

NOTE:
The pre-packaged cornbread mixes are very good and they are quick & easy to fix in a pinch. Just try different brands until you find one you like. Of course, nothing is as good as homemade cornbread.
