Granny Ann's Cake Section
        
Nita's Coconut Cake

1 1/2 cups flour, sifted
1 cup sugar
2 teaspoon baking powder (rounded)
1/2 teaspoon salt
2/3 cup milk
1/3 cup shortening (rounded)
1 teaspoon vanilla
2 eggs

Mix all together except the eggs. Mix by hand 150 strokes (or 2 minutes hand mixer) ADD eggs and mix by hand 150 strokes (or 2 minutes hand mixer). Pour into 2 greased and floured (baker's joy spray) cake pans or 13X9 long cake pan. Bake 375 degrees for 30-35 minutes. Invert on cake racks and let cool for the 2 cake pans. Frost with icing below.

7 Minute Frosting

1 1/2 cups sugar
2 egg whites
dash salt                             
2 Tlbs. Karo, heaping 
1 tsp. vanilla 
1/3 cup water
1 can coconut

Mix all together in top of double boiler. Boil water in bottom pan first. Then add top pan. Beat with electric mixer for 7 minutes while on stove. Frosting will be ready when it peeks. Remove from heat and stir with spoon. Punch holes in cake with knife. Use 1/4 frosting on bottom layer, sprinkle with 1/2 coconut. Use remaining frosting for top layer and sides then sprinkle with remaining coconut. Use all of frosting if 13X9" cake pan is used and sprinkle coconut as needed.

Family History

This cake has been baked by my mother-in-law for our family reunions over the years. It is so good and is the first thing the family will get before they line up for the main meal. She has been such a great cook . My husband has almost learned to master this cake with her help.
