Chocolate Mayonnaise Cake

2 cups all purpose flour
1 cup sugar
1 1/2teaspoons baking soda
1 1/2 teaspoon baking powder
4 Tablespoons cocoa powder
1/2 teaspoon salt

Sift together dry ingredients and add 1 cup cold water, 1 cup salad dressing, 1 1/2 teaspoons vanilla. Mix well. Pour into a well floured and greased cake pan 13X9
(The flour spray in a can works well to coat cake pan)                          Bake at 350F degrees for 30 minutes.  Check cake in center with a toothpick, if it comes out clean cake is done. Add icing below after cake has cool.

Icing

Mix and boil for 2 minutes, 1 cup sugar, 1/4 cup cocoa, 1/4 cup milk and 1/4 cup butter. (Do not over boil as this icing will turn to a sugary paste). Take a wooden spoon handle and poke holes over the top of the cake and then pour the icing all over the cake.   Cool completely before cutting.

This is SO good!! Most folks turn their nose up when you mention mayonnaise in the cake, but this cake is so moist and very good with ice cream or sweet milk while the cake is still warm. The mayonnaise takes the place of eggs.

Have a great day!
