Kids Breakfast Cake

1/4 cup brown sugar, packed
1 Tablespoon margarine/butter
1/2 teaspoon cinnamon
1/4 cup walnuts or pecans, chopped
1 cup all-purpose flour
1/3 cup sugar
1/2 teaspoon baking
1/4 teaspoon baking soda
Dash salt
1 egg, well beaten
1/2 cup applesauce
1/4 cup cooking oil
1/2 teaspoon vanilla

Heat oven 350 degrees. Spray an 8X8X2 inch baking dish with a flour non-stick spray, set aside.

TOPPING: In a small bowl add brown sugar, butter and cinnamon. Mix with a spoon till crumbly. Add chopped nuts and mix well. Set aside.

In a large bowl add flour, sugar, baking powder, baking soda and dash salt. Mix with spoon. In a small bowl crack egg and beat with a fork until well blended. ADD applesauce, cooking oil and vanilla. Stir till mixed. ADD applesauce mixture to the flour ingredients; stir until dry ingredients are wet. Use a rubber scraper to help pour batter in the greased pan and scrape all the batter from the sides and bottom of bowl. Sprinkle topping over the batter.

Put the baking pan in the pre-heated oven and bake 20-25 minutes or until a toothpick inserted into cake comes out clean. Place the cake on a cooling rack and cool for 15 minutes. Serve warm or cold.  (9 servings)

TIPS for KIDS

Cooking is fun.

Find a recipe and carefully read it. Assemble the ingredients and equipment that will be needed. Be sure you have an ADULT present to help you at all times.

SAFETY TIPS:

Always use hot pads or potholders when cooking or baking and make sure an ADULT is there to help you.

Always wash your hands before you start to cook! Use soap and water, clean all parts of your hands really good.

Don't forget: Help clean up after you have finished baking or cooking. Mom & Dad will like that and so will your grandparents.
