Strawberry Gelatin Salad


2 packages (3 oz.) each strawberry gelatin
1 cup boiling water
2 packages (10 oz.) each frozen, sliced strawberries, thawed
1 (15 oz.) can crushed pineapple with juice
3 medium bananas, mashed
2 (8oz) cartons vanilla yogurt

In a 2-quart saucepan, bring 1 cup of water to boiling. Remove from heat and add strawberry gelatin and stir until completely dissolved. This takes about 2 minutes. (Use a large pan if you are cooking with the new sugar-free gelatins. They foam up a lot more than the regular)  

Stir in thawed strawberries and pineapple. In a medium bowl mash bananas with a fork. ADD bananas to strawberry mixture and mix. Pour half of this mixture into a 12X8 inch dish or pan. (Save rest)

Place dish in refrigerator until gelatin is firm. When firm, spread the vanilla yogurt on top. Gently spoon the rest of the strawberry gelatin on top. Refrigerator until firm again.

To serve; cut into 12 squares. Refrigerator leftovers, covered with plastic wrap.
