Pistachio Pudding Salad
(From Edna S. - 2001)
1 small box pistachio pudding mix
1 (20 oz.) can crushed pineapple, undrained
1 cup miniature marshmallows
1 (8 oz.) carton frozen whipped topping, thawed
1/2 cup pecans or walnuts, chopped
Combine pistachio pudding mix (dry) and pineapple. ADD marshmallows, thawed frozen whipped topping and pecans; fold together. Refrigerate over night. SO very good!!
NOTE: This recipe was introduced to me at one of many luncheons we had at work. Whenever we knew a party was to take place this was the one salad we always requested to have for lunch. I had never tasted anything so good and it has become one of my favorite. Oh yeah!!
