Southern Biscuits


SIFT Together :                                                                                            2 cup all-purpose flour                                                                                3 teaspoons baking powder                                                                         1 teaspoon salt        
                                                                        
ADD 6 Tablespoons shortening and with a fork cut in to look like fine cornmeal:                                                                                                    STIR in 2/3 cup milk                         

Roundup on lightly floured board. Knead lightly (30 seconds). Roll or pat out with hand about 1/2" thick (only 1/4 for Southern biscuits).   Cut with biscuit cutter and place on an ungreased cookie sheet.

Bake:  450 degrees    10 to 12 minutes

TIPS:

How to make buttermilk when you don't have any or don't use buttermilk daily.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup (let stand for 5 minutes before using)

NOTE:
The pre-packaged cornbread mixes are very good and they are quick & easy to fix in a pinch. Just try different brands until you find one you like. Of course, nothing is as good as homemade cornbread.
