Hamburger Potato Pie

2 lbs ground beef
1 15 oz can mixed vegetables or frozen mixed vegetables
6 medium Russet potatoes, washed, peeled & chunked
1 lb Colby Jack Cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1 stick butter
3 tablespoons milk

In a large skillet brown ground beef with salt and pepper until meat shows no pink. ADD mixed vegetables, mix well and set aside. DO NOT drain.

In a large sauce pan ADD peeled, chunked potatoes and cover with water. Cook potatoes over medium heat till they are tender or when poked with a fork they are soft. Drain water off and ADD butter and milk. Salt & pepper to taste and mash potatoes to a creamy mixture.

Pour meat mixture into a 9X13 baking dish and spread evenly over bottom of pan. Spread mashed potatoes over meat evenly. Cut cheese into long, slender chunks and push down into the potatoes in a random fashion all over the top.

Place in a pre-heated oven 350 degrees and bake until top of potatoes are lightly browned.
